Note This is a much simplified lowcalorie version of a recipe originally from Reza's Indian Spice. The spinach side dish I made has negligable caloriesand is actually a good accompaniment forthe main curry
So, instead of reaching for ready-to-eat diet meals in the supermarket, I am creating my own lowcalorie recipes at home, which means I have more control over salt and additives
well, what with doing my Wartime Kitchen and preparing for Christmas, I have not had time to post any meal plans, or indeed any of my new recipes, but, I am rectifying that today with a NEW recipe that’s just right for all the snow and frost we have been having over the last few days – a Scottish inspired Highland Stew
It’s so much easier to followthe plan that way and I know what I am doing. And, one of the best ways to keep on track, for me, is to devise a weekly meal plan
This is a recipe that is suitable for any meal, whether you are on a low-caloriediet or not, and is perfect forthe barbecue, when that elusive season arrives
To serve, spoon potatoes on to a bed of green salad leaves on a large serving platter as part of a buffet, or serve with salad leaves and sliced ham, chicken or cold meats as a light low-calorie lunch or supper dish
Recipe to follow. And finally, as ever, I am submitting my Monday Meal Plan into At Home with Mrs M’s weekly link up for Meal Planning Monday, a handyresource of blog meal plans all in one place
You can use pork fillets instead of chicken, and of course Quorn pieces would be great for vegetarians, you just need to adjust thecaloriesfor those two ingredients (if using), the Quorn will be lower in caloriesandthe pork if lean, will be about the same of slightly higher
A bit like my mother who used to send us all to tidy our rooms while she diligently cleaned the loo and mopped the kitchen floor BEFOREthe cleaner came
I am finding myself being drawn more and more to comfort food recipes, as autumn deepens andthe first frosts appear, and so it’s with great pleasure that I share my hearty Hungarian Savoury Minced Beef, this is a real comfort meal and is low in calories, but, it is also suitable for a mid-week family supper – frugal and thrifty it may be, but it certainly doesn’t lack in flavour
So, here is my latest low-calorie recipe offering – but like all my recipes, I HOPE that they can be cooked or prepared for those of you NOT on a diet too
I am rather pleased with this recipe, not just because it is very filling and extremely flavoursome, but because my husband, who is NOT following any diet, asked if he could have some for his lunch, as the aromatic fragrance of the lemons, cumin and garlic infused the kitchen and apparently titillated his taste buds
I am pretty pleased with this recipe on numerous counts - firstly, it uses prime Scottish haddock, secondly it is easy to make and thirdly it is healthy andlow in calories, that’s a win, win, win situation I think – oh yes, it won’t break the bank to make it too
LowCalorie Oven Steamed Cod with Celeriac Champ. It has a mild celery flavour that I really like and when mashed with a little low fat cream cheese it is light and tasty
