Ingredients

  • 150 g of unsalted butter, at room temperature (2/3 cup)
  • 100 g of golden caster sugar (1/2 cup)
  • 150 g of soft light brown sugar (3/4 cup)
  • 1 large free range egg
  • 1 tsp vanilla eextract
  • 1 tsp cinnamon extract
  • 1 tsp ginger extract
  • 1 tsp apple cider vinegar
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 140 g of plain flour (1 cup)
  • 240 g of rolled oats (2 1/2 cups)

  • For the buttercream
  • 60 g of unsalted butter, softened (1/4 cup)
  • 260 g of sifted icing sugar (2 cups)
  • the finely grated zest of one lime
  • 1 TBS fresh lime juice
