On this week’s menu was the Hummingbird Bakery’s amazing Lemon and Thyme Drizzle (or Loaf) cake. It’s so delicious and so easy to make that we whipped one up for Ell’s office whilst we were finishing our morning coffee, and a second one for Drew’s office whilst we were digesting lunch (it’s not fair to favour either office, and if we hadn’t made two the rest of the lemonthyme and sour cream from our previous weeks tea party (blog on that to follow) would have been wasted)
Slowly add in salt & sugar. Add lemon juice and vanilla extract and mix well. I was SO excited when flipped the cake out from the bundt pan, revealing this perfectly beautiful golden brown crust that is so evenly browned
So this lemoncake happened the other day in my. amount of lemon zest, lemon juice and butter. cake is a cake made in bundt shaped pan which gives it distinct ring shape
However, rather than a regular sponge cake, it's a lemonbundtcake with a lemon glaze. Everyone that had the cake thought it was delicious and really lemony
Also, the flavour will be better when cold, so you can refrigerate it to get it cold before you add the curd When the cake is cold, cut it in half and sandwich it together with the Lemon Curd, then spread the topping all over the top and sides of cake

Scan bran is a very high fibre crisp bread, like Ryvita but nowhere near as nice, that are sold at Slimming World groups or in some health food stores like Holland & Barrett
