A couple of years ago, on one of our caravan holidays in Sligo, I treated myself daily to a coffee and a lemon muffin (to be fair, it was only a three day holiday) All the time, wondering how I’d be able to keep up this new found habit when we got home

So I made him some lemonmuffins for his lunchbox as an extra special treat. It also means that there is no more opportunity to snack at my desk while I’m working so these muffins did last longer than I expected
zest of one lemon. 3 tablespoons lemon juice. Preheat oven to 350 degrees. Grease or line muffin tin. Add all ingredients except poppy seeds to food processor and process until well combined
This recipe is super easy to put together, they are a bit of a twist on my Lemon and White Chocolate Muffins, with the addition of blueberries, which remind’s me that summer is hopefully on it’s way

Lemon blueberry corn flour muffins. Only this bald cupcake, aka muffin, is so lovely and fragrant, lightly lemony and just right in its balance of good crumb, while also being gluten-free, vegan, naturally sweetened/low sugar
1½ cup (120ml) of fat free lemon yoghurt. 1Juice and rind of 1 small lemon (or use 1 tsp of lemon extract). 1juice of half a lemonPreheat oven to 180c or 350f. 1Add the yogurt, egg, sweetener, juice and rind of lemon to a bowl and whisk thoroughly. 1Pierce all over the top of the muffins with a small wooden skewer and allow to cool. 1Slowly add the juice of half a lemon, stirring after each little bit, until you have an icing that can be easily drizzle (not to thick, not too runny). 1Once muffins have cooled, drizzle icing over the top
When you mix baking soda with lemon juice in a batter, the result is a light and fluffy muffin. Add in butter and ricotta cheese for richness and these are easily some of best muffins you’ll ever eat
I have been wanting to make these lemon poppy seed muffins for a long time. My son always opts for them when we go to Starbucks and are definitely his next favourite after my double chocolate muffins
