  • 240 g (1 1/2 cup) plain flour, sieved
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 EGGS 215g (1 cup) SUGAR
  • 30 g (2 tbsp) butter, Softened.
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • 80 g (1/3 cup) lemon juice
  • 100 g (1/2 cup) oil
  • Lemon icing
  • 230 g (1 cup + 1 tbsp) caster sugar
  • 30 g (2 tbsp) whole milk
  • 1/2 tsp lemon extract
