Ingredients

  • 2 egg Caster sugar equal to the weight of 2 eggs in their shells
  • Salted butter equal to the weight of 2 eggs in their shells
  • Self-raising flour equal to the weight of 2 eggs in their shells
  • 1 vanilla bean
  • 1 tsp vanilla extract
  • 115 g/4oz blueberries
  • 2 lemons 250ml/9fl.oz water
  • 100 g/3.5oz sugar
  • 2-3 lemons 1.25 tsp powdered gelatin
  • 200 g/7oz white chocolate chips
  • 3 tbsp sour cream
  • 250 ml/9fl.oz double cream
  • 115 g/4oz blueberries
  • Icing sugar for dusting
