I wanted to make a veggie soup, but also wanted one which is wholesome and filling so, naturally, I went for leek andpotato (brocolli and stilton would have been a close second)
Put the bacon on a medium heat and let the fat render turning them frequently. for the bacon croutons. Result tender and tasty, and a great addition to leek and sweet potatosoup
