  • 2 shallots
  • 4 cloves of garlic
  • 1 fennel bulb
  • 2 carrots
  • 4 tablespoons tomato purée
  • 750 ml full
  • 500 ml vegetable stock
  • Sea salt and freshly ground black pepper
  • 4 sprigs of fresh thyme
