It is great for jazzing up soups, kedgerees, rice and noodle dishes and sometimes just for marinating a nice piece of lamb or steak or even salmon before you grill it
Bring the lentils to the boil and then reduce to a simmer. I’m not sure “casserole” is actually a good name for this dish as it is more like a vegetarian bolognese and even a little meaty in texture

I cut as much of the meat off the bones as I could, and trimmed as much fat as I could too (lamb can be quite fatty) and made this gorgeous, mouthwatering succulent abd tender lambcasserole with it
