  • about 30g of porcini mushrooms
  • 2 tbsp olive oil
  • 1 pack of cubed pancetta (206g)
  • 1 red onion, finely sliced
  • 1 tsp brown demerara sugar (optional)
  • 1 tsp dry sherry (optional)
  • 2 cloves of garlic
  • 2 tbsp olive oil + more for frying beef
  • 1 tsp dried thyme
  • 2 kg sliced braising steak
  • 30 g butter
  • 1 tub of beef stock (500g)
  • 200 ml red wine
  • 1 tsp dried basil
  • 2 bay leaves
  • 1 tbsp balsamic vinegar
  • 200 g cooked peeled chestnuts
