Ingredients

  • 1 pound lamb
  • 2 TBS light olive oil
  • 2 large carrots, peeled and chopped
  • 2 sticks celery, peeled and chopped
  • 1 large onion, peeled and chopped
  • 2 sprigs of thyme
  • salt and black pepper
  • (cut into half moons if the potatoes are largish)
  • 600 ml lamb stock
  • 1 knob of butter
  • chopped parsley to garnish if desired
