Pop your potatoes into a deep baking dishPrepare your stock. Ingredients8-10 white potatoes (maris piper make nice roasties)1 Oxo cube, chicken or beefFrylightMethodPreheat oven to 180°cChop each potato into 2 or 3 parts, depending on sizePar-boil your potatoes in boiling water. Once ready, pour the stock over the potatoes, so it covers around 2/3’s. Spray the tops of the potatoes with Frylight and season them lightlyCook in the oven until the stock has evaporated (around 1 hour) Additional InfoIf you've been cooking your potatoes for an hour or so and still seem to have loads of stock left, you can cheat a little and pour a bit out to speed them up. 8-10 white potatoes
These pieces take longer to cook so are best for a Pot Roast and when given long slow cooking can be very delicious, serve them with some root vegetables and potatoes and it makes for a very fine family meal
