Ingredients

  • 300 g carrots
  • 300 g celery stalks
  • 300 g onions
  • 3 bay leaves
  • 1 heaped tsp mixed herbs
  • 1 tsp sea salt
  • Pepper
  • Oil
  • 1 kg lean beef mince
  • 250 g unsmoked or smoked pancetta/streaky bacon (already diced or in one big chunk)
  • some red wine (optional)
  • 2 tins chopped tomatoes
  • 2 half tins of water to wash out the tins
  • 200 ml milk
  • pepper
  • 2 leftover parmesan rinds for added flavour (optional)
