This soup is inspired from the Asian hotandsoursoup but instead of using meats we infused it with and array of different mushrooms to give it that earthy meaty edge missing from most vegetable soups
You can make your hotandsoursoup simply with vegetables, or throw in some seafood and fish minutes minutes before serving, or a couple of handfuls of shredded roast chicken
Hotandsoursoup is a dish from the Sichuan cuisine made out of strips of chicken or pork cooked in a thick broth with vegetables like mushrooms, day lily buds, wood ear fungus, bamboo shoots and tofu
