  • 1 hour
  • 10-12 shortbread fingers
  • 200 g butter at room temperature (so take it out of the fridge about half an hour before you want to use it)
  • 100 g caster sugar (plus a little extra to sprinkle on top of the shortbread)
  • 200 g plain flour
  • 100 g rice flour
  • 1 tsp vanilla extract
