500g cranberries 1tbsp Cointreau (optional) Zest and juice 1 orange 100g caster sugar 2tbsp maple syrupPut the cranberries, Cointreau (if using) and the orange zest and juice in a pan, then bring to a gentle simmer.
the caster sugar and stir until it dissolves completely. Add the maple syrup. Simmer for 4 mins or until the cranberries burst.
to a serving bowl and leave to cool completely.
TIP: Cranberry sauce can end up with a skin on it by the time it reaches the table. To avoid that, let it cool in the pan, then give it a good stir before you spoon it into the serving bowl.
Place everything in a saucepan, bring to a boil on medium heat, then lower heat right down and simmer for about 5 - 10 minutes at the most. 5 minutes will give you a sauce with largely whole cranberries, 10 will give you a slightly mushier result
