  • 6 large tomatoes
  • 4 large chillies about 45 g (I used Cayenne)
  • 375 ml (1 ½ cups) cider vinegar
  • 125 g (½ cup) caster sugar
  • 2 teaspoons salt
  • 1 tablespoon pickling spice tied up in a spice bag
