Ingredients

  • 2 chicken thighs
  • 1 tsp curry powder
  • olive oil spray
  • 30 g Thai green curry paste
  • 200 g half fat coconut milk
  • 200 ml vegetable or chicken stock
  • 1 tbsp
  • 1 tbsp dark muscavado sugar
  • 5 lime leaves
  • 120 g fresh
  • cooked brown rice
  • 1/2 small cucumber
  • 4 spring onions
  • 1 tbsp
  • 5 minutes Keep warm.
