Ingredients

  • 100 g of sugar
  • 100 g of Natvia can be substituted
  • Carrot cake
  • 150 g Natvia baking pack
  • 150 ml coconut oil
  • 3 large eggs
  • 225 g plain wholemeal flour
  • 2½ teaspoons baking powder
  • 1 teaspoon ground mixed spice
  • 175 g grated carrots
  • 75 g sultanas
  • 125 g Natvia icing mix
  • 125 g full fat soft cheese (I used Philadelphia)
  • zest of ½ orange
  • 1 tablespoon fresh orange juice
