Streaky bacon, use good quality as cheaper ones can have a lot of added water which makes it more difficult to crisp 3 tbsp Olive oil 15g butter 3 cloves garlic 3 sprigs of Rosemary or Thyme Salt and pepper to taste Method Preheat the oven 220c, 200c fan, Gas mark 7, 425f Cut the potatoes almost all the way through into thin slices but that are still joined at the bottom of the potato, like a book. Brunch potatoes – Herby roasted potatoeswithbacon and onions and topped with a fried egg. Sometimes dinners like that end up as a strange mismatch of things, never to be repeated and at other times they just seem to come together into something perfect, and that’s what happened with these brunch potatoes

Divide the mixture between the sweet potatoes, and then top with tomatoes, avocado, and cilantro. If you don't cook your sweet potatoes long enough, and they don't cream on their own, add butter and almond milk to make them really creamy as you mash them
Now these potatoes in the pictures are Albert Bartlett Rooster which are one of my favourite spuds as they have a great flavour and they are so versatile, and I also recommend using Rapeseed Oil, for this recipe I have used Farrington Mellow Yellow it adds a great colour to the spuds, and it is great to support a local producer, with such a good product
Everything we loved in baked potatoes – sour cream, green onions, butter, cheese – all mashed together and stuffed back into the potato and baked with a top layer of ooey gooey cheese
Remove with a slotted spoon and arrange, cut-side up in a baking dish. Add the chopped mushroom stalks, bacon and garlic to the frying pan and fry for 5 mins, then transfer to a bowl. 50g rindless smoked bacon
