  • 75 g pecan nuts or walnuts

  • 150 ml oil
  • 150 g light brown soft sugar
  • 200 g self-raising flour (wholemeal or white)
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp ginger
  • 1 tsp bicarbonate of soda
  • 220 g peeled and grated carrots
  • 50 g dessiccated coconut
  • grated zest of 1 orange
  • 200 g full fat cream cheese
  • 75 g butter
  • 100 g icing sugar
  • Zest of 3 clementines
