I started withHairy Bikers' Chicken Tikka Masala from their Great Curries book. Pour this into a heatproof bowl, cover with cling film, cool and chill until you’re ready to cook the chicken

In a saucepan bring the stock to the boil and season with salt, pepper and seasoning. Meanwhile add the chicken, mushrooms, bacon, pepper, onion, garlic clove and sweetcorn into a large frying pan and cook through
Check that the chicken is cooked, then serve. 3 boneless, skinless chicken breasts (each about 150g), thinly sliced. Stir-fry the chicken in the oil over a high heat for 2-3 minutes until it's beginning to brown. Season with pepper and stir-fry for 2 minutes
