The traditional dish is haggis, neeps (turnips) andtatties. There are vegetarian versions of haggis, but not everyone likes the meat or the vegetarian options as they can be quite spicy
Place the pan back on the heat, add the butter, allow to froth, add the turnip back in and sauté until cooked and breaking up, pass through with a masher a few times

At the bottom the home-made vegan Haggis, then a think layer of neeps aka turnip or swede. first with the vegan haggis, then a thin layer of neep followed finally with the mashed tatties

I believe the type of offal used can vary from haggis to haggis, this particular one contained. I've already mentioned his intransigent hatred for black pudding and he's highly dubious about offal as well so I didn't hold out much hope for this being one of my most successful culinary experiments

And there I was, tipsy withwhisky, full of haggis-n-neepsand enthusiasm, stripping the willow, dashing the White Sargent and flying the Scotsman all over the place
