Ingredients

  • 4 ripe tomatoes, cut into wedges
  • 11 medium or half a large green capsicum, sliced thinly
  • 11 medium sized cucumber, sliced
  • 1 half a medium sized red onion, sliced
  • 1 a good handful of Kalamata olives
  • 1200 g Dodoni feta cheese
  • 160 ml olive oil
  • 130 ml red wine vinegar
  • 1 a good pinch dried Greek oregano
  • 1 pinch saltCombine the tomatoes, capsicum, cucumber and onions on a plate or bowl.
  • 1 Scatter the olives around the ingredients.
  • 1 Top with Dodoni feta cheese
  • 1 Sprinkle the dried Greek oregano over the whole salad.
  • 1 Whisk the olive oil, vinegar and salt and pour over the salad and serve immediately.
