Greek Pasta Salad

Ingredients

  • 150 g/5.5oz of fusilli pasta (can use gluten free)
  • 11 cup (240ml) of chopped cucumber
  • 11 cup (240ml) of chopped fresh tomatoes
  • 1½ red onion, thinly sliced
  • 190 g/3oz of feta cheese, crumbled (2 HEa's)
  • 11 tsp of olive oil (2 syns)
  • 11 tbs of fresh chopped mint
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 11 tbs of maple syrup (2 syns)
  • 12 tbs of fresh lemon juiceAdd pasta to a saucepan of boiling salted hot water and cook till al dente (10 mins)
  • 1 Allow to cool
  • 1 Add to a bowl the pasta, cucumber, tomato, red onion and feta cheese.
  • 1 Whisk together in the ingredients for the dressing.
  • 1 Pour over the salad and mix well to combine.
  • 1 Divide among two bowls
  • 1 Enjoyy
