2 cups of cooked rice (make sure it is cold). 13 raw chicken thighs (or can use some leftover cooked chicken), chopped small. 1Add the chicken, season with black pepper and fry till golden, remove and set aside. 1Add the onion, celery, garlic and ginger and cook for a few mins to soften. 1Add the carrot , mushrooms and red pepper and fry for a further couple of mins. 1Add the soy sauce, chickenandrice, and using a the back of a the wooden spoon break up any big pieces of rice. 1Add the peas and sesame oil and stir to evenly coat. 1Then make a hole in the middle of the mixture, spray with a little spray oil and pour in the beaten eggs, stirring the egg continuously until the egg starts to cook and then you can mix it all into the rice
Pour the peanut sauce into a bowl and serve warm alongside the chickenandrice. I thought the hawker stalls were just so exciting and loved the way the sticky rice came wrapped up in banana leaves
Today's recipe is Indo Chinese fried rice dish which is easy to make and make use of all the leftover veggies, chickenandrice in the cupboard and fridge
You could make it with white rice but you would have to play around with cooking times (it will cook much quicker than brown so would need to be added later) and the amount of stock, so I suggest you stick with brown rice too
I like chicken, I like mayonaise and I like Rice Krispies. Im hoping Big Bee and Little Bee will be more willing to try them when they return from their holiday
