Ingredients

  • 150 g gluten-free digestive biscuits
  • 90 g unsalted butter, melted
  • Plus extra melted butter for greasing
  • 900 g full fat Philadelphia cream cheese
  • 250 g caster sugar
  • A pinch of salt
  • 30 g cornflour
  • The scraped out seeds of 2 vanilla pods or 2 tsp vanilla extract
  • Finely grated zest of 1 lemon 2 tsp lemon juice
  • 3 large eggs, plus 1 yolk 200ml soured cream
  • 225 ml soured cream
  • 1 tbsp caster sugar
  • 2 tsp lemon juice
