Initially it was lets make jam then galette then claufoutis and eventually settled with this crunchy coconut and oat topped plum, apple and red currant crumble baked in fragrant cinnamon and nutmeg spice
You could experiment with using white chocolate as a topping too, but firstly, it's not usually dairyfree, secondly, it didn't look quite so nice once cooled and set, and thirdly, it just didn't taste as good, which is why I haven't put it as a suggestion - it was my favourite Green & Black's organic white chocolate as well
Once the cakes are cool sandwich them together with the frosting, method below. I have made this cake completely dairy and glutenfree, obviously if you do not have these requirements you could use butter and regular flour and leave out the xantham gum

I love this cake, its so virtuous but so so delicious and really you can't tell its glutenfree or dairyfree, its so moist and chocolatey and very decadent yet light even with the frosting
For me, cooking & baking glutenfree (& dairyfree) has become second nature & I rarely struggle with achieving tasty results that are GF & DF, however removing refined sugar from baking has not always been so easy – I’m getting better though

Being gluten and dairyfree can't keep a Yorkshire woman away from her Yorkshire puds. Although I like to have a healthy diet, there's got to be room in my life for treats and tradition - good for the soul
I've added some orange to my cake as well and spent longer than was probably necessary debating with myself whether I should call it Carrot Cake or Carrot & Orange Cake
