  • 2 tbsp olive oil
  • 2 red onions, peeled and sliced
  • 4 garlic cloves
  • 2 tbsp goose fat or sunflower oil
  • 15 g freshly grated horseradish
  • 1 tbsp white wine vinegar
  • 1 tsp chopped chives
  • 150 g of crème fraiche
  • 15 minutes per
  • 450 g for rare or
  • 20 minutes per
  • 450 g for medium
