  • 200 g cooked pasta shapes, of your choice
  • 1 garlic cloves, grated
  • Shredded chicken/ham/salami, whatever you have in the fridge
  • 150 g sunblush tomatoes, halved if necessary
  • 8 black olives, pitted and halved
  • 1 small handful of fresh basil, chopped - or a spoon of pesto if you have none
  • ¼ cucumber, de-seeded and cubed
  • 25 g pine nuts
  • 50 g feta, crumbled (optional)
  • 2 tbsp white wine vinegar, or to taste
  • 3 tbsp extra virgin olive oil
  • Sea salt and freshly ground black pepper

  • 1 Warm the pasta through, if you are using leftovers, and tip into a large bowl.
  • 2 In a separate jug, grate the garlic and add the vinegar and oil, season well and taste - this will be your dressing, adjust the flavours if needed.
  • 3 Add the shredded meat to the pasta along with the olives, cucumber, tomatoes and basil or pesto and toss well.
  • 4 Pour over the dressing, adding a little more oil if needed. Toss well and season again, if needed.
  • 5 Lightly toast the pine nuts and sprinkle over the top, then crumble over the feta and serve.
