Ingredients

  • 150 ml (1/2 cup + 2 tablespoons) Milk
  • 3 tablespoons Treacle
  • 225 ml (1 cup) Rapeseed oil
  • 375 grams (3 cups + 3/8 cup) Plain flour
  • 3 teaspoon Baking powder
  • 1 1/2 teaspoon Bicarbonate of soda
  • 375 grams (1 cup + 7/8 cup) Dark brown muscovado sugar
  • 2 teaspoons Ground Cinnamon
  • 2 teaspoons Ground Ginger
  • 3 pinches of Ground Cloves
  • Pinch of Maldon Sea Salt
  • 300 ml (1 1/4 cups) Buttermilk
  • 3 Large Eggs
  • 3 tablespoons Rum
  • 2 teaspoons Pure Vanilla Extract
  • 250 grams (1 cup + 1/8 cup) Unsalted butter, very soft
  • 600 grams (1 lb 4 oz) Icing sugar
  • 300 grams (11 oz) Full Fat Cream Cheese
  • 1 tablespoon Rum
  • 200 grams (7oz) Smooth Lotus Biscuit Spread
  • Edible Glitter to decorate (optional)
