Ingredients

  • 350 g plain flour
  • 150 g soft brown sugar (or use ginger sugar if you can find it – see note below*)
  • 150 g butter, plus extra for greasing
  • 150 g golden syrup
  • 50 g stem ginger (or crystallized ginger) chopped
  • 1/2 tsp bicarbonate of soda
  • pinch of salt
  • 100 g dark chocolate (optional)
