Ingredients

  • 6 chicken thighs
  • 2 bulbs of garlic (roughly 25 cloves - skin on)
  • half a fennel bulb - roughly chopped
  • 5 spring onions - roughly chopped using the whole length
  • 7 medium chestnut (brown) mushrooms - quartered
  • 1 glass of white wine
  • a handful of pitted, green olives
  • seasoning
  • 1 large sprig of lemon thyme
  • 1 large sprig of rosemary
