I am always looking for new ideas and ways to incorporate them into our meals. This pie has become a family favourite and is a meal that I can rely on if I have forgotten to take any meat or fish out of the freezer
1 onion, halved and sliced (16p). 250g chestnut mushrooms, sliced (99p). 1 - Heat 1 tbsp olive oil in a deep saute pan. 2 - Place the courgettes, onions and mushrooms in the pan and cook for 5 minutes. 3 - Once the vegetables are starting to soften add the tin of tomatoes, mixed herbs and cayenne pepper according to taste. 4 - Bring to the boil and simmer for 5 minutes. 5 - Transfer into an oven proof dish, scatter over the grated cheese and place under a high grill to melt the cheese. It fed all five of us and there was a meal left over for the twins. If you ever look at the contents of shop bought curry meals you will be amazed by how many calories and fat content there is
I am going to show you how easy and cheap it is to substitute pasta with gnocchi. 1 courgette, quartered and sliced (40p). 1 - Heat the olive oil in a large frying pan and gently fry the onions and courgette until starting to soften. 2 - Add the mushrooms, peppers, tomatoes andand a handful of chopped fresh basil. 3 - Cook on a medium heat for 10 minutes. 4 - While the vegetables are cooking boil a pan of water for the gnocchi. 5 - Place the gnocchi in the boiling water and simmer for 3 - 5 minutes (check the packet for cooking time). 6 - Once the gnocchi is heated through place in an oven proof dish. 7 - Spoon the cooked vegetables on the top of the gnocchi, sprinkle over the grated cheese and place under a medium grill until the cheese has melted. I am happy to eat salads but the children, and the hubby, like more substantial meals. Mix the ingredients together with your handsandform small meat balls
I hate waste and am always looking for new ways to use any leftovers. This meal is a great way to save wasting any leftovers, is a super quick meal to cook and the whole family will love it
As you can see, most of the meals above use the same ingredients, for example if you were to buy mince it would make the cottage pie and the chilli con carne
we hope that some of our relatives will be able to visit for a walk on the beach mid-morning followed by a help yourself lunch of turkey curry and seafood lasagne
This is a super healthy meal both for the body andfor the bank. Pearl barley is a cheap grain to buy and is so tasty when cooked in a stock as it absorbs all of the flavours

well, what with doing my Wartime Kitchen and preparing for Christmas, I have not had time to post any meal plans, or indeed any of my new recipes, but, I am rectifying that today with a NEW recipe that’s just right for all the snow and frost we have been having over the last few days – a Scottish inspired Highland Stew
