Ingredients

  • 2 aubergines cut into 2-3cm chunks
  • 6 tbsp olive oil
  • 4 tbsp white wine vinegar or lemon juice
  • 1 tsp dried oregano
  • 1 clove of garlic, crushed
  • 1 tsp fresh mint, chopped (or ½ tsp dried mint)
  • 25 g/1oz vegan Parmesan-style topping such as Parmazano (or grated vegetarian Parmesan-style cheese for non-vegans).
