Ingredients

  • 4, as a starter,
  • 2 as main
  • 100 g butter
  • 50 g butter
  • 50 ml olive oil
  • 4 large onions
  • 1 tbsp plain flour
  • 300 ml medium
  • or dry cider
  • 800 ml beef stock
  • 1 tbsp balsamic vinegar
  • 8 baguette slices
  • 1 clove garlic
  • salt and pepper
  • 100 g Cheddar
  • 1. Heat the butter in a heavy base saucepan over low heat and add the onions, stirring well.
  • 2. Add 1 quarter tsp salt and some freshly ground black pepper and stir again. Turn the heat down to its lowest setting and cook the onions for 45
