Some sites recommend that you place a saucer in the pot to hold the fruit under the surface of the liquid, but mine has a neck that is too narrow to get one in so I washed and dried a plastic lid from a food tub and put that in – I will keep an eye on it and see how it gets on but as it stands, all the fruit is beneath the liquid
Lighter and done afresh, the most basic recipe can be topped and dressed, in shape or form, to look fabulous by the most inexperienced cook and as long as you use quality ingredients, they will taste fantastic too

Soooo I'm getting really into the idea of making one pot meals for him. Not to mention--not only is this recipe quick and easy, and all made in one pot, BUT it also is made with ingredients you almost definitely already have (the Cajun seasoning is the only thing I needed to buy for this recipe, and I know Michael is happy that we now have that
