Ingredients

  • 150 g unsalted butter, softened
  • 150 g golden caster sugar
  • 3 large eggs (free range please), beaten
  • 1/2 teaspoon vanilla essence
  • 2 tablespoons almond milk (you can use cow’s milk if you prefer)
  • 150 g ground almonds
  • 5 tablespoons gluten-free plain flour
  • 3/4 teaspoon baking powder
  • 5 fresh figs, halved
