I’d love to tell you some story about how I first came across this blackpepperchicken curry when I was backpacking around India, or how I discovered it in some wonderful Keralan restaurant
Combine the chicken, onion, garlic, cheese, egg, blackpepper and salt in a medium mixing bowl. This particular recipe has baked chicken meatballs dunked in a toothsome roasted red pepper-tomatosauce and of course, lots of melted cheese
The orange and blackpepper butter can of course be used to baste a turkey instead of chicken. Rub the chicken all over with the butter, drizzle a little olive oil, this stops the butter burning

In search of inspiration for my own entry, I came across this rather unusual sounding recipe on the BBC Food website for Herby Mozzarella Stuffed Chicken with Blueberry and Hot PepperSauce
Chinese Beef with Honey and BlackPepperSauce is a Chinese dish made out of stir fried tender beef pieces in a sweet, salty and peppery hot sauce made out of honey and blackpepper
If you want to serve yours with Egg Fried Rice like we did, prepare your rice as normal then scramble eggs in a seperate pan, when both are cooked, mix together in a pan and add a glug of soy sauce
2 chicken breasts. 1salt and blackpepper. 12 roasted red peppers, jarred (inbrine - no sugar/oil etc). 11 cup (240ml) of chicken stock. 11 tsp of paprikaPlace a chicken breast in between some plastic wrap and flatten with a rollingpin). 1Lay the chicken breast on plastic wrap, fill with half the feta cheese and using the cling film, roll up tightly), repeat with the other chicken breast. 1Place in the fridge for a couple of hours , or even the night before (it will just firm them up slightly and hold them in shape). 1Spray a frying pan with spray oil over a medium heat. 1Remove the plastic wrap from the chicken, and season with salt and blackpepper. 1Place on the frying pan and brown all sides of the chicken roll. 1Place on a baking tray in the oven for approx 15 mins till chicken is cooked through. 1While the chicken is cooking you can make the sauce. 1Add the roasted red peppers, tomato paste, stock and paprika to a blender and blend till smooth. 1Add to a small saucepan and heat till it thickens. 1Serve the chicken sliced and drizzled in the roasted red peppersauce with your choice of sides
Stir the chickeninto the sauce. In goes the garlic and ginger paste along with the soy sauce. One of my favourite curries was a blackpepperchicken curry that I had at The Cinnamon Grand at their restaurant Nuga Gama
Add your beef and toss in the sauce until heated through, and cooked to your liking (if you’re usingchicken or pork, continuecooking until they are cooked all the way through – test the largest piece, add extra hot water if your sauce starts getting too thick as necessary
Crisp tofu cooked in tomato and blackpeppersauce (dau hu sot ca). It actually reminded me a little of Malaysian BlackPepper Tofu, but of course this recipe was not as heavily peppered, it still packed a flavour punch to the chops
You could just eat the fried 'rice' on its own, or serve it up with stir fried prawns or other meats, but I loved it with this recipe for ChickeninBlack Bean Sauce
We made a syn free Tomato sauce base, which you can make in advance and keep it in the fridge for up to a week, or you can portion it up and keep it in the freezer
