An amazing pasta bake with a Mexican twist. Like this. You might like my other pasta bakes. BBQ Chicken Pasta Melt, Giant Stuffed Pasta Shells, Chile Nacho Style Pasta Bake
With minimal effort, maximum flavour and very little washing up, it is the perfect week night meal. Spray with fry light and bake in the oven on a medium heat heat for 1 hour, or until the chicken and veg is cooked through
Sprinkle the cheese on top and place back in the oven for a few mins until the cheese has melted. This is a perfect winter warmer and is another variation of my popular BBQ Chicken Stacks
This recipe is as easy as chopping some veg and putting it in a dish, however if you have a slow cooker you can put all the ingredients in before you go to work, and by the time you come home you will be greeted by the smell of this delicious casserole waiting for you
If you cook up a batch of pulled chicken a day or so before, this dish is a great midweek meal. I'm always trying to think of exciting new SlimmingWorldfriendlyBBQ sauce and cheese dishes (see BBQ Chicken stacks, BBQ Pasta Melt, BBQ Beef Calzone Pizza) and I think you will love this one
Stir well and leave to simmer for a few mins. It's really easy to put to together and this recipe makes 4 portions, perfect for extra lunches. Par boil the pasta for 5 mins or until slightly softened then mix with the BBQ beef sauce. Put the mix into a large casserole dish and then top with slices of mozzarella, to be sure you top with enough for your HE, weigh out 40g of light mozzarella each time and separate into 4 sections, so you know 1 section = 1 HE. Bake in the oven for 20-25 mins or until cooked through
If you don't want to use a few syns on chorizo you could swap for a low fat, flavoursome sausage. Reduce the heat to low and mix until a smooth sauce is formed

This is the time I love to start eating winter warmer meals like casseroles, stews and pies. What's even better with meals like this is that you can chuck everything in a dish or slow cooker and let it do its work
Add everything into a large Casserole dish and cook for 45 mins or the Casserole is cooked is bubbling. Bring a large pan of water to the boil, then cook the potatoes for 3 mins
