I loved eggplantsand cauliflower in particular, vegetables that many children refuse to eat. This Kheema Aloocurry (kheema is ground meat andaloo is potatoes in Urdu) is very good and even though I don’t cook it often, I do try a little bit when I cook it for the family

Add the mayonnaise, chopped ham, sweetcorn andcurry powder and mix well. As well as the usual Danish open sandwiches (smørrebrød) they also had a counter serving jacket potatoesand this was my favourite filling
Boil or steam the potatoes until tender (bearing in mind steaming will be quicker) and set aside. I served it alongside a yummy chicken curry, mint yogurt raita, naan, rice and my easy seekh kebabs in onion ketchup sauce
