Ingredients

  • 8 servings Velvety eggplants and creamy potatoes in a spicy curry
  • 3 medium
  • 1 medium onion
  • 2 teaspoon garlic
  • 1 teaspoon ginger
  • 1 tablespoon tomato paste
  • 2 teaspoon cumin
  • 2 teaspoon coriander
  • 1 teaspoon turmeric
  • ½ teaspoon red
  • cayenne powder
  • 1 green chilli
  • 3 tablespoons cilantro
  • 3 tablespoons oil
  • 20-30 minutes I like my eggplant very soft so it takes about
  • 30 minutes Keep checking until you get the consistency you like
