RoughPuffPastry – Low. PuffPastry – High. Flaky Pastry – Medium. The butter needs to be similar consistency as the dough – if too soft return to the fridge
I find a lot of bought gluten free stuff is a real disappointment – dry, gritty, bad-tasting and generally quite unpleasant, so I try and make my own where I can - this often means experimenting with different quantities and ingredients and having a few fails - so when something really works, I really want to share it
Next pour in the cold water and lemon juice, stirring with a knife to begin combining, then gently bring together to form a rough dough ball with your fingers, (keeping them as cool as possible)
This is just a quick version of puffpastry. I tend to have a couple of block of butter in the freezer and use them for this or puffpastry as I find the end result is much better
My personal preference for getting rid of a domed top is to turn the cake upside down, I use a turntable when cutting or decorating my cakes, but placing the cake onto the base of your tin and placing that onto an upturned saucer will do just as well
When it comes to cakes made from ripe fruit, it may be that the Banana Cake is better known as a way of using up ripe bananas, but here is a great recipe for a wonderful apple cake
- do check with a skewer that it's cooked through. Prepare a cake tin, with either a liner, or greased and floured and pour the batter in - smooth it out (roughly) evenly
you can make your own puffpastry but I just bought a block of ready to roll 'All Butter Pastry'. They are a wonderful confection of buttery pastry, dried fruits (most commonly currants), sugar and spices
I really miss one particular carrot cake in Dublin, it was incredibly moist and delicious, but now that I’m living in Barcelona it is not that easy to find a good Carrot Cake so I have started baking this cake at home

My fish cakes are made with wild hake fish (not pre-cooked) and spices, no potatoes included, I mashed the fish using food processor and added spices, you can use tuna or salmon instead
