Ingredients

  • 1 tbsp oil
  • 1 tsp of mustard seeds
  • 1 onion, finely sliced
  • 2 tsp of ground cumin
  • 2 tsp of ground coriander
  • 1 tsp of ground tumeric
  • 5 cm piece of ginger
  • ½ a red chilli
  • 2 cloves of garlic, minced
  • 1 large carrot
  • 200 g caulilflower
  • 1 medium sweet potato
  • 100 ml water
  • 1 x 400g tin of chopped tomoatoes
  • 100 g fresh spinach
  • 1 x 225g tin of chickpeas, drained
  • 1 tsp of garam masala
  • The juice of ½ a lemon or lime
  • Salt and Pepper
