Ingredients

  • 10-15 minutes Cooking Time: 20-30 minutes Serves: 3-4 people Cuisine:- Indo-Mexican
  • 1 cup full of rice – washed thoroughly and socked for half an hour
  • 4-5 ripe tomatoes
  • 1 ½ cup assorted Beans – cooked or strained if using canned variety
  • 1 Large onion, chopped very fine
  • 1 inch Ginger piece – grated
  • 4-5 cloves of Garlic – minced or crushed
  • 2 tbsp Olive Oil
  • 1 tsp cumin seeds
  • 1 tsp red Chili powder OR paprika
  • ½ tsp Turmeric powder
  • ½ tsp coriander powder – optional
  • ½ tsp of Black Pepper
  • Salt to taste
  • A few sprigs of fresh coriander leaves ( cilantro )
