  • 200 g raw king prawns
  • 1 red onion, finely chopped
  • 1 tsp ground ginger
  • 400 g tin chopped tomatoes
  • 1 50 g sachet creamed coconut
  • 2 tsp red curry paste
  • 1 tsp curry powder
  • 8 cherry tomatoes, sliced
  • 100 g spinach, optional
  • tablespoon vegetable oil, for frying
  • 1/2 tsp salt
  • 1/2 tin water
  • 1 tbsp tomato purée
  • 2 tbsp freshly chopped parsley
