Easy No-bake White Chocolate and Strawberry Cheesecake

  • - 500 g Mascarpone Cheese
  • - 200 g Plain Digestive Biscuits
  • - 80 g Unsalted Butter
  • - 110 g White Chocolate, grated
  • - 200 g Strawberries, hulled and halved
  • - 4 tbsp Icing Sugar
  • - 1 tsp Vanilla Extract


    1. Grease the bottom and sides of a 20cm deep loose-bottomed cake tin.

    2. Melt the butter in a saucepan over a medium heat while crushing the biscuits using the end of a rolling pin until they resemble breadcrumbs.

    3. Pour the melted butter over the biscuits and mix until all the ingredients are combined, then place and flatten in the cake tin to chill for 10 minutes.

    4. Using an electric whisk, beat the mascarpone cheese until it becomes soft and easier to work with, then mix in the icing sugar and vanilla extract.

    5. Fold in the white chocolate and strawberries, and pour over the biscuit base.

    6. Freeze for 3-4 hours, then refrigerate for 1 hour or until ready to serve.
