2 x 400g tins Asda Mexican Style Bean Mix, rinsed and drained 400g tin Asda Chopped Tomatoes in Tomato Juice 1 reduced-salt vegetable stock cube, make up to 600ml with boiling water 2tsp ground cumin ½tsp mild chilli powder 198g tin Asda Sweetcorn in Water, drained 4tbsp low-fat natural yogurt 1 lime, cut into wedges Coriander, to servePut the beans, chopped tomatoes, stock and spices into a large pan and bring to the boil on a medium-high heat. Simmer for 15 mins, stirring occasionally, until the tomatoes start to break down.
with black pepper, add the sweetcorn and simmer for another 2-3 mins until heated through. Ladle into bowls and serve with a dollop of yogurt, a squeeze of lime and some coriander, if you like.
Add black beans, tomatoes and vegetable broth. Add the other cup of broth if you like a thinner soup. In a soup pot over medium heat, sauté the onion, garlic and red bell pepper in 1/4 cup water until softened, about 5-6 minutes. (Start with 3 cups of broth, you can add more later if you like a thinner soup). Using an immersion blender, puree as much as the soup as you like (I do about 1/2). Alternately, you can carefully transfer 1/2 of the soup to a blender, purée, and add back to the pot. 4 cups cooked black beans (or about 3 cans, rinsed and drained)
If you want to reduce the amount of liquid you can bubble away on the hob top for a while. Combine chicken stock, beans (drained), sweetcorn, tomatoes, parsley, spring onions, garlic powder, onion powder, cumin, cayenne pepper and salt in the slow cooker
