MethodI marinated my chickenwith salt, curry, chillies and seasoning overnight so that the chicken is well flavoured when cooked and also to help it cook faster
This is a simple curry, mild enough for kids to eat and easy enough for them to cook. 1 kg of chicken breast or thigh meat, cut into large chunks. 2 tbsps mild curry powder. 1 tin of coconutmilk. Add the curry powder and salt, fry for another 30 seconds. Add the chicken, stir well so that is coated in the onion and spice mixture, and fry for about 10 minutes. Add the coconutmilk, bring to a boil, reduce heat to minimum and simmer for 30 minutes. 1 kg of chicken breast or thigh meat, cut into large chunks. 2 tbsps mild curry powder. 1 tin of coconutmilk
As is the case with all types of legume,…. Add the chicken, sweet potatoes and lentils and stir to coat in the paste, then pour in the stock and coconutmilk

Nevertheless this is one easycurry to make with basic ingredients in your pantry and goes along well with soft hot chappathis and can be paired with pulao or white rice too
8 Chicken Thighs (all visible fat removed). 1200ml/7fl oz of light coconutmilk - 6 syns. 1200ml/7fl oz of chicken stock. 1Fresh Chopped CorianderPierce sweet potato with a fork, place in microwave and cook for 5 mins (should feel soft to touch). 1Spray pan with spray oil. 1Cut sweet potato in half and scoop out all flesh, add to instant pot, along with all the spices. 1Add chicken thighs, chilis, coconutmilk and chicken stock. 1Shred chicken slightly into sauce. 1Sprinkle with fresh chopped coriander. 1Serve with choice of sides
But even if the thought of roasting and grinding your spices may sound daunting, it is very quick and easy and you don’t need to use the ready-made powders
