EASY CHEESY VEGGIE HAM AND ONION SCONES

Ingredients

  • 300 g plain flour
  • 1/4 tsp ground pepper
  • 1 tbsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 28 g golden caster sugar
  • 110 g cold margarine (kept very cold!)
  • 1 large egg, beaten
  • 170 g plain yoghurt
  • 2 tbsp soya milk
  • 30 g grated cheddar
  • 30 g veggie ham, diced
  • 6 spring onions, finely chopped

Instructions

    Preheat the oven to 200 C and line a baking sheet with baking paper

    In a large bowl add the flour, pepper, sugar, baking powder and bicarbonate of soda and mix well to combine

    Cut the margarine into cubes while adding it to the dry mixture and rub the butter into the dry mixture with your fingertips until it looks like breadcrumbs

    In another bowl whisk together the egg, milk and yoghurt

    Add the wet ingredients to the dry ingredients and use a fork to mix it through so everything is just moistened

    Add in the cheese, ham and spring onions (leaving a little bit of cheese and onions for sprinkling later) and fold into the mixture gently with a wooden spoon. Don’t worry that it doesn’t look like a nice smooth dough, it s meant to be sort of bitty and lumpy! It works out in the end, I promise!)

    Pour the dough mixture onto the baking sheet and shape into a circle

    Cut into 8 wedges and separate on the sheet so that they have room around them (don’t worry if they stick together a bit when cooking, they’ll still taste amazing and the rustic look is so cool!)

    Scatter over the remaining cheese and onion (for decoration!)

    Place in the oven and bake for 18-20 minutes until golden on the top

    Remove from the oven and either eat warm or let cool for a bit – fresh from the oven is AMAZING!
