Ingredients

  • 8-12 small
  • 100 g light spelt (or plain
  • 40 g teff or other finely ground wholegrain or seed flour
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 1/4 tsp ground cardamom
  • 1/8 tsp
  • 1/8 tsp salt
  • 2 eggs
  • 250 ml milk
  • 20 g best butter, melted
  • 20 g organic
  • 1 tsp pure vanilla extract
  • 75 g grated carrot
  • Syrup (for 6 pancakes)
  • 25 g best butter
  • 50 ml best maple or date syrup
  • 1/4 tsp ground cardamom
  • 40 g finely chopped
  • 1. Heat your waffle maker as directed by the manufacturer.
  • 2. Dry whisk the flours, baking powder, sugar
  • 3. In a separate, scrupulously clean, bowl whisk the egg white to stiff peaks. Set aside.
